Going Vegan: Vegan Meatball and Noodles with Sriracha
Are you planning to go vegan, but you're not that 100% committed to giving up your eating habits and favorites? If so, you don't have to worry. Transitioning to a whole new different diet like a vegan diet can be tough at first. You may have a hard time eating vegan food, and eliminating your intake of meat and meat-based produce can be a big leap. However, did you know you can still eat your meat-based foods and make them in a vegan version? If you don't, then this recipe is perfect for you to try at home.
An enticing and spicy meal.
Everybody loves a fresh and homemade meatball. If you're one of those people who love meatballs, then this recipe is a must-try. If you're vegan, you can always make an alternative that is close to meatballs. The alternative? Veggie balls, of course!
Veggie balls are not only healthy, but it is perfect for vegetarians out there. To spice it all up, this recipe is all about veggie meatballs and spicy, Sriracha noodles. To know how to prepare this meal, here are the ingredients that you might need.
For the meatballs:
- 10-ounce tofu, water-drained
- Three spring onions, finely sliced
- Three cloves of garlic, crushed
- Small red chili, finely chopped
- I cup of cilantro, chopped
- 1 tbsp of egg replacement
- 4 tbsp of buckwheat flour
- 2 tbsp of sesame oil
- 1 tbsp of Sriracha sauce
- 1 tbsp of coconut oil
For the sauce:
- 5 tbsps water
- 5 tbsp ketchup
- 5 tbsps maple syrup
- 5 tbsp Sriracha sauce
To start, preheat your oven to 350 degrees Fahrenheit. Prepares a baking tray and put grease-proof paper. Next, prepare your vegan meatballs.
Gently mash the tofu with any masher you have at home. Mash it in a large mixing bowl until the tofu is already in small pieces. Add the other meatball ingredients in the tofu and mix it well with a wooden spoon. Make sure every ingredient is well incorporated with the other ingredients. If the mixture shows a little wetness, add more flour to it until the mixture has a doughy, soft texture. Once done, form the mixture into small balls or however you like it. Put the balls in the baking tray and set aside first.
Next, cook your rice noodles. Follow the guide in the packet and prepare your other vegetables for grilling.
In a non-stick frying pan, set the stove in low heat and add coconut oil. Saute the meatballs in the pan. When it's golden brown, put the balls back to the tray and pop in the oven for 10 minutes to cook it through.
While the meatballs are still in the oven, it's time to make your Sriracha sauce. Combine all sauce ingredients in a saucepan and heat it gently. On the side, grill your other vegetables on a hot griddle pan.
Once the meatballs are cooked, get a bowl and put the noodles in it. Top it with the Sriracha sauce, the grilled vegetables, and the meatballs. Plate beautifully.
