Start by cooking the shallots over medium heat in a saucepan until it softens. Add the fig preserves, balsamic vinegar, thyme, cayenne, salt, and let it simmer, then set it aside. Mix the Italian seasoning, lemon zest, and olive oil and brush it on the sliced Halloumi. Grill the Haloumi for 2 to 3 minutes per side, then serve it on buns topped with fig sauce, mint, Peppadews, cucumbers, and arugula.

Pesto Lentil Burgers

For the sauce, whisk together tahini, dill, lemon zest, garlic, paprika, and salt. Serve this burger dish with tomatoes, lettuce, and tahini-dill sauce on top.
