Boudin Products Recalled Due To Possible Contamination And Temperature Abuse

Roughly 25,764 pounds of fresh Boudin products produced with pre-cooked rice made by Carlton Foods of New Braunfels, Texas are being recalled for possible temperature abuse and possible Bacillus Cereus contamination, Food Safety and Inspection Service (FSIS) announced Thursday.

The pork and rice products delivered to Louisiana and Texas with manufacturing dates August 22, 2014 to Oct. 17, 2014 are being recalled including:

12- oz. vacuum-packed packages of 'Richard's Hickory Smoked Boudin

12-oz. vacuum-packed packages of 'Hot Premium Boudin

12-oz. vacuum-packed packages of 'Richard's Premium Boudin

 6-oz. vacuum-packed packages of 'Richard's Premium Boudin'

32 -oz. vacuum-packed packages of 'Richard's Cajun Grillers Boudin'

The Boudin products recollected by Carlton Foods for possible contamination and temperature abuse are the ones with mark inspection number 'EST. 1943' or 'EST. 961,'  bearing 'sell by' dates Oct. 28 to Dec. 16.

The problem was detected by FSIS personnel during their food safety assessment. A Food Safety and Inspection Service personnel noted the problem during the production of the pre-cooked rice where it was held at unsafe temperature.

Products held at wrong temperature like Boudin products could result to production of Bacillus Cereus with emetic toxins.  According to Food Safety, Bacillus cereus is a type of bacteria that creates toxins. These toxins can cause diarrhea and the other, called emetic toxin, leads to nausea and vomiting.

Carlton Foods and Food Safety and Inspection Service have not received any report or incidence of contamination due to consumption of Boudin products.  Foods most especially rice and leftovers, soups, sauces and package foods held long at room temperature are its primary sources.

Food Safety Magazine claims, the significance of checking temperatures under the HACCP-based food safety programs and Hazard Analysis and Critical Control Points (HACCP) food safety management program during processing, retail, distribution, and consumer storage of potentially hazardous foods ensures that temperature abuse will not take place.

Carlton Foods, manufacturer of Boudin products are held responsible for the product's proper handling even after its production. The manufacturer or distributor's role extends to transportation and distribution by making sure it controls the chemical, biological and physical health risks.
