Oats have long been a breakfast staple. They're easy to prepare and always filling. However, oats are not always a joy to eat. While oats may be the healthier option, many would opt for cereal for its wide variety of flavors. Enter baked oats.

Thanks to TikTok, boring oats have gotten a makeover. After viral videos of whipped coffee and pancake cereals, TikTokers have brought oats into the spotlight. Shape reports that #BakedOats now has nearly 80 million followers.

Vanilla Berry Baked Oats

2 1/2 cups rolled oats

1 1/2 cups fresh mixed berries, plus extra for topping

1 teaspoon baking powder

1/4 teaspoon salt

1/4 cup sliced almonds or chopped pecans

2 tablespoons organic brown sugar

1 teaspoon cinnamon

1 teaspoon vanilla extract

3 tablespoons warm water

1 tablespoon ground flax meal

1 tablespoon canola oil or melted coconut oil

1/3 cup maple syrup, plus more for serving

2 1/4 cups almond or soy milk, plus more for serving

Optional: Jam and/or nut butter for serving

Preheat the oven to 350° F.

Prepare an 8- or 9-inch square baking dish. Lightly brush it with oil.

Mix the flax meal and the water in a small bowl and wait for it to thicken.

Mix the dry ingredients in a large mixing bowl.

Whisk all wet ingredients, including the flax mixture, in a separate bowl. Combine dry and wet ingredients. Next, fold in the berries.

Transfer the mixture into the oiled baking dish. Top with more berries and bake for 15 minutes in the oven.

Take the baking dish out and sprinkle the almonds or pecans on top. Dust brown sugar over everything and return to the oven. Bake for 10 more minutes until oats are spongy. It should be solid enough to slice into portions. Serve hot on cold with your desired toppings.

1/2 tsp vanilla extract

A dollop of Greek yogurt to serve

Preheat the oven to 350° F.
