1 pound chicken cutlets or tenders

1 1/2 cups grated parmesan

3 cloves garlic, finely chopped or grated
3-4 teaspoons cajun seasoning

2 ounces cream cheese, at room temperature

Boil salted water in a large pot. Cook the pasta until al dente and then drain afterward. While waiting for the waiter to boil, place the 1/2 cup parmesan in a shallow bowl and the Panko.
Dredge both sides of the chicken through the mixture. Press down to make it stick well, then place the chicken on a plate. To make the sauce, heat two tablespoons of olive oil over medium-high heat. Add the onions and cook until soft.
Add the bell peppers and garlic and cook for about five minutes until the peppers are soft. Add the cajun seasoning and a pinch each of red pepper flakes, salt, and pepper.
Pour in the cream and milk once the spices are fragrant. Stir and add the cream cheese. Whisk until smooth. Bring the sauce to a gentle simmer until the sauce is slightly thickened.
To cook the chicken, heat the remaining two tablespoons of oil in a large skillet over medium-high heat. Cook the chicken for three to four minutes per side until golden brown.
Transfer to a cutting board and slice into thin strips. Season with salt and add the remaining parmesan to the sauce. Toss in the pasta and cook for a couple more minutes.
Remove from the heat and stir in parsley. Transfer to individual plates or serving bowl and top with chicken.

1/4 cup balsamic or Italian dressing (optional for added zing)
10-12 ounces rigatoni
Parmesan or parsley or basil for toppings
In a large skillet, heat the butter over medium-high heat. Sauté the garlic, onion, celery, and carrots for about ten minutes until everything is very soft.
Add the ground sausage, red pepper flakes, oregano, salt, and pepper. Add the wine when the sausage is fully cooked. Add the tomatoes and optional dressing. Simmer for about 20 to 30 minutes until the sauce is reduced.
In a separate pot, cook the pasta until al dente. Add to the sauce and mix gently. The sauce should be saucy. Transfer to a large serving dish and top with parsley or basil and parmesan.
