The new variety of vinegar is rich in taste and has subtle spicy notes for more depth. The Bourbon Reserve Balsamic Vinegar is an aged version of the company's traditional balsamic variety.

The new type of vinegar is achieved by aging normal balsamic vinegar in Bourbon barrels. The finest quality Bourbon is sourced from the Garrison Brothers Distillery in Hye, Texas. The traditional balsamic vinegar is produced on-site at the Texas olive oil company and is aged in barrels.

The traditional balsamic is a regular feature at the family-run farm in honor of the family's Italian heritage. Balsamic vinegar originated in Italy and the dark, rich variety at Texas Hill is considered a versatile, healthy ingredient in most dishes.

The sweet, natural, full-bodied traditional balsamic is made from grape must and grape wine vinegar. Its natural 4% acidity is made more complex with the bourbon aging process as the Bourbon Reserve Balsamic is made.

The Texas Hill Country Olive Co. is an organic farm that does not use artificial flavoring or sugar in the processing of its balsamic vinegar. The nutritional value information of the Bourbon Reserve Balsamic Vinegar states that a single serving of the vinegar only has 40 calories and as a result can be a healthy addition to dishes.

The organic product is produced naturally so it needs to be stored in a secure location to avoid exposure to hot temperatures and light. Any prolonged exposure to heat and light can damage the quality of the product. However, the Bourbon Reserve Balsamic Vinegar has a long shelf life and can be kept and consumed for up to six years if stored safely and properly.

The new Olive Oil Flight offers four of the company's prominent Texas olive oil blends and one serving of the farm's special balsamic vinegar. The first blend is the Sola Stella Extra Virgin Olive Oil that is single-varietal, delicate, and comes from the Arbequina variety of olive trees. The next blend is the Terra Verde Extra Virgin Olive Oil blend that has medium-level intensity in terms of flavor. It is sourced from the three olive tree varieties of Arbequina, Mission, and Pendolino within the company's orchards.

The third blend can be robust or mild and is called the Super Greek Extra Virgin Olive Oil, a single-varietal olive oil sourced from the Koroneiki olive tree. The fourth and final olive oil blend on offer is the Miller's Blend Extra Virgin Olive Oil. The flavor intensity of the fourth blend is noticeably robust and the olive oil is sourced from Arbequina and Mission olive trees. The final offering on the Olive Flight tasting menu is the Traditional Balsamic Vinegar. The dark vinegar is barrel-aged, full-bodied, sweet, natural, and made from grape must and grape wine vinegar.

Each of the offerings is meant to be eaten together in a tasting where the taster progresses from the first blend to the second. Each tasting is similar to a wine tasting where there are rules and techniques for swirling, sniffing, slurping, and swallowing each serving of the olive oil blends and the traditional balsamic.
