It seems Lemon Perfect is hitting the shelves just in time. According to author and health expert Susan Peirce Thompson, sugar is physiologically as "addictive as cocaine. So people are literally trapped in a physiological addiction. The brain scans are very clear on that."

Health-Conscious Consumers Turn Their Backs on Sugar

Many consumers are turning their backs on sugar, and their pursuit of zero-sugar beverages has strengthened the multibillion-dollar enhanced water category in 2022. Marketing experts who follow the data expect that trend to continue into 2023.

American entrepreneur Yanni Hufnagel entered the world of enhanced water ahead of the curve with his award-winning Lemon Perfect. His Atlanta-based startup The Lemon Perfect Company has attained a valuation of more than $100 million after funding rounds. The brand is available nationwide at Publix, Kroger, Whole Foods, and Ralphs, and is expanding into Costco, CVS, Walmart, and Target.

Using non-nutritive sweeteners isn't new in the beverage industry. But according to Simporter, a product research firm specializing in consumer packaged goods, consumers are learning about healthier sweeteners. More than ever, modern brands face greater customer awareness and scrutiny about their products' flavors and ingredients. 

According to consumer product data from Simporter, the enhanced water category is most likely growing due to the continued trend of health consciousness, as more consumers are looking for ways to reduce sugar and improve their overall health. With sugar reduction a top priority, they seek refreshing, hydrating water beverages free of added sweeteners.

Yanni Hufnagel's Lemon Perfect Is Ahead of the Trends

Before launching his beverage company, Hufnagel flourished in his earlier career as a coach for men's college basketball teams including the Harvard Crimson, Vanderbilt Commodores, California Golden Bears (Berkeley), and Nevada Wolf Pack (University of Nevada). As such, he was aware of the behaviors of young athletes. 

While watching basketball players chug down enhanced water beverage Bai in the locker room, Hufnagel experienced an epiphany. He asked himself, "Can you take organic lemon water and give it the flavor profile of Bai?"

As part of his morning health routine, Hufnagel had been squeezing organic lemon juice into a glass of pure water. But he found the process annoying and messy and the taste bland.

"It was a nonnegotiable part of my daily routine," he says. "And I hated it."

Some enhanced waters and sports drinks are more sugar-laden than others. Customers looking to wean themselves off high-calorie sweetened beverages could do much worse than Bai or Hint, whose original formulations debuted with low sugar as an attribute. Some popular sports drinks entered the market as low sugar and have added zero-sugar lines to respond to consumer demand. 

Hufnagel was confident he had to produce a zero-sugar water formulation before leaping into the market.

"The idea of great flavor that's also good for you has been the bedrock of our brand from day one," Hufnagel says.

So, Lemon Perfect bolted out of the gate with no sugar in its recipe. As a bonus, Lemon Perfect's recipe is so natural and low glycemic that it is safe for people with diabetes, as it has no effect on blood sugar levels.

Yanni Hufnagel Creates a Recipe With Good Taste

To disrupt the multibillion-dollar enhanced water market, Hufnagel decided Lemon Perfect must taste delicious regardless of its nutritional profile. Creating such a flavor was a worthy challenge. 

According to Simporter, people are increasingly interested in eating plant-based foods and beverages, even if they're not fully committed to a vegan lifestyle. When Hufnagel worked with a top-notch beverage laboratory to devise Lemon Perfect's formulation, the resulting water blended organic plant-based sweeteners, like stevia, with organic flavors.

 The drink formulation includes no artificial flavors or sweeteners, is made of organic ingredients, contains electrolytes from potassium, and is packed with vitamin C. The juicing process used to make Lemon Perfect gently extracts the lemon's juice and pulp, preserving the integrity of lemons' essential antioxidants, vitamins, minerals, and enzymes. 

"There's nothing in the category with our flavor profile, the freshness of our flavor profile, our nutritional deck, and zero sugar," Hufnagel says. "We're bottled in 100% recycled plastic, and we're organic."

Simporter's research shows that consumers search for and purchase focus-oriented flavored waters. To be successful, the company suggests brands should create products that meet the specific needs of each consumer. To that end, Lemon Perfect has branched out into seven shelf-stable flavors, each bottle of which contains the juice of half a squeezed organic lemon. The lineup includes Original Lemon, Dragon Fruit Mango, Strawberry Passion Fruit, Pineapple Coconut, Blueberry Açaí, Peach Raspberry, and Kiwi Star Fruit. 

The Future Looks Bright for Lemon Perfect

Seeking a healthy lifestyle, consumers have discovered that enhanced water can be a boon to the pursuit of staying hydrated throughout the day without ingesting artificial ingredients or gobs of calories. Such beverages have high year-over-year growth potential, meaning brands should focus their strategies on creating products low in calories, sugar, and sodium. 

Flavored waters can include added ingredients, such as preservatives, but Lemon Perfect does not. Lemon Perfect is kept fresh through flash pasteurization, an eco-friendly technique. This method assures customers that every bottle of Lemon Perfect contains every drop of the good stuff (organic lemon juice).
