Irish Dublin Coddle Recipe

Ingredients
8 oz bacon
1 pound sausages
1/2 pt 1 cup stock or water
5 potatoes, peeled and sliced
1 1/2 onions, sliced
salt and pepper to taste

Directions
1. Cut the bacon into 1-inch pieces. Bring the stock to the boil in a saucepan.
2. Add the sausages and bacon; simmer for 5 minutes. Remove from the pan; save the liquid.
3. Cut each sausage 1/2-inch pieces. Place potatoes in the pan, followed by onions and then half of the sausages and bacon.
4. Repeat the process one more time.
5. Pour the reserved stock over; season with salt and pepper. Simmer for about an hour.
