You Should Love Summer Soup

Warm weather doesn't mean you put filling, comforting recipes like soup ::ahem:: on the back burner. There are a variety of chilled soups that are hearty, healthy, and deliciously refreshing. Summer soups are especially great for vegetarians, since they usually don't involve any meat (you can substitute vegetable stock for chicken stock in any recipe). They're simple, but flavorful. Here are some suggestions to try.

1) Gazpacho
Gaspacho is a chunky soup popular in Spain. You can make it with tomato, which is the most common, or with radishes or watermelon. Que sabor!

2) Sweet Fruit Soups
Using yogurt, you can create a chilled melon soup or a strawberry orange soup. Using lemon juice and sparkling wine, you can create sparkling pineapple soup. Soup isn't what you would think of when you think of fruit or of sweetness, but maybe it should be. 

3) Vegetable soups
Avocados, potatos, spinach, carrots, asparagus, and fennel can all be the star ingrediant of a chilled soup. Putting the soup in the refrigerador for a few hours allows the flavors to combine well (think of how tasty leftovers are the next day!), which means that the taste of the main vegetable really comes though.
