Moto's Chef, Richie Farina said in a Yahoo Travel post, "creating things that might not even look like food."

The same post also describes one of Chef Farina's creations - basically a dish that resembles a fallen log. The dirt-like substance that surrounds the fallen log is actually mushrooms. The food is actually composed of vegetables and mushroom piled on top the "fallen log". Finally leak ash and garnish of flowers were added to enhance the food's flavor.
