Green Chicken Curry Recipe

This is a delicious yet simple green chicken curry recipe for people seriously pushed for time.

Ingredients
1 pound chicken breast, cut into 1 inch cubes
1 tbsp dark soy sauce
1 tbsp all-purpose flour
2 tbsp olive oil
2 tbsp green curry paste
2 green onions, chopped
3 garlic cloves, chopped
1 tsp fresh ginger, finely chopped
2 cups coconut milk
1 tbsp fish sauce
1 tbsp soy sauce
2 tbsp sugar

Directions
1. Toss chicken first in 1 tablespoon soy sauce. Coat evenly the pieces in the flour
2. In a large skillet, heat the oil over medium high heat. Place chicken in the skillet; cook chicken until browned, about 5 minutes. Remove the chicken from the skillet.
3. Reduce heat to medium. Stir in curry paste; cook for 1 minute. Add in green onions, garlic, and ginger; cook an additional 2 minutes.
4. Add the cooked chicken to the skillet; coat with the curry mixture.
5. Add the coconut milk, fish sauce, 1 tablespoon of soy sauce, and sugar.
6. Simmer over low-medium heat for 15-20 minutes until all ingredients are combined well together.
7. Serve with rice.
