Soups are a classic choice for warming up on a cold winter's night. We don't often appreciate its value as summer fare, though. However, there's actually some fantastic soups perfect for the lighter, warmer season.
Lobster Coconut Bisque
At Bourbon Steak OC in Dana Point, California, this bisque is made with truffle boba, Dungeness crab, and crispy shallots. Executive chef Bryan Brown says: "Our Lobster Coconut Bisque is the ideal summer soup. Lobster bisque can be heavy, but coconut milk brings a soothing lightness to this dish while fun ingredients like our house made truffle boba add a pop a richness that complements the lobster and crab without being too overwhelming."
