Sushi Recipes: Temakizushi (Temaki-zushi)

Temaki-zushi is the one of the easiest sushi to make at home. “Te” means hands, “Maki” means “roll”.

Ingredients
Tuna, slightly frozen, cut into 3× 3/8 ×3/8 inches lengths sticks
Squid, cut into 3× 3/8 ×3/8 inches lengths sticks
Radish strips, 3 inches lengths
Paprika sticks, 3 inches
Carrot sticks, 3 inches
Cucumber sticks, 3 inches
Chopped scallion, 20 laver sheets (7 1/2 inch),
5 cups of rice
Sauce
Soy sauce and wasabi

Directions
1. Prepare the rice
For making sushi, you need short-grain white rice, because it should be sticky enough. Wash it twice. If you wash too many time, the rice can lose its nourishment. The ratio of rice and water is 1: 1.2~1.3.
2. Cook it over high heat. Use electronic rice cooker, if possible. Then reduce heat to medium for 5 minutes. Reduce heat to low and boil for additional 10 minutes.
3. Transfer rice in a large flat-bottomed bowl in order to let it cool.
4. Season the rice
Put 1/3 cup vinegar, 1 tsp. sea salt, 1tbsp. sugar in a bowl and mix them, until well-mixed.
5. Cut the fishes, vegetables in 3 inches sticks and chopped scallion.
6. Pick a sheet of laver and place it on your left palm. Put a spoonful of rice on the laver and spread it evenly. Apply a bit of wasabi on the rice.
7. Add filling foods (Tuna or squid, radish strip, paprika, carrot, cucumber,and scallion).
8. Roll it into a cone form. Serve with sauce.
