Tender asparagus is at their peak at this time. You cannot spend this season without making a good asparagus salad. Enjoy the blessing of the season!
Ingredients
 1 lb tender asparagus
 2 tbsp balsamic vinegar
 3 tablespoons olive oil
 1 tsp lemon juice
 1 tsp Dijon mustard
 1 tsp minced garlic
 1 red bell pepper, diced
 Salt and pepper
Directions 
 1. Trim the ends of the asparagus and, peel the bottom halves.
 2. In a large skillet, boil the water; put some salt. Add the asparagus and cook about 5 minutes. Drain and rinse with cold water.
 3. In a bowl, whisk together the vinegar, mustard and garlic. Drizzle in the olive oil, whisking until combined; season to taste with salt and pepper.
 4. Place the cooked asparagus and diced bell pepper on a platter and drizzle with the dressing.
