Ingredients
1 pound lacinato kale, stems removed, cut crosswise into 1/2-inch slices
3 tbsp olive oil
1 onion, finely chopped
7 garlic cloves, finely chopped
1/2 pound spaghetti
2 tsp fresh lemon juice
Parmesan cheese, finely grated
Directions
1. Rinse kale and drain. Remove the center and stems. Cut into 1/2-inch length.
2. Heat 2 tablespoons olive oil in heavy large pot over medium heat. Add the chopped onion and cook until translucent. Add the chopped garlic; season with salt. Cook until onion is golden brown, stirring occasionally.
3. Add kale and remaining 1 tablespoon olive oil, and cook about 3 minutes. Cover pot and reduce heat to medium-low. Cook until kale is very tender about 20 minutes, adding water by teaspoonfuls if dry, stirring occasionally.
4. Meanwhile, cook spaghetti in a pot of boiling salted water aldante. Drain; reserve some of cooking liquid. Pour cooked spaghetti to kale mixture in the pot. Add lemon juice and the reserved cooking liquid; toss to combine.
5. Sprinkle spaghetti with grated Parmesan cheese. Serve.
