Potato Vareniki
Ingredients
 2 pounds potatoes, cooked
 2 medium onions, chopped
 1 stick margarine
 2 cups flour
 1/2 tsp salt
 Salt and pepper
Ingredients
 1. Boil the potatoes in water pot until soft; put them through a potato ricer.
 2. Saute onion in margarine until brown and soft. Add the cooked onions to the potatoes and season with salt and pepper.
 3. In a bowl, sift flour and salt. Add vegetable oil and water to make a soft dough. Cover dough and let rest for 15 minutes.
 4. On a floured board, roll out dough to a 1/4-inch thickness. Cut the dough into small squares.
 5. Put a spoon of the potato mixture in the center of each square. Fold dough, pinch ends to form a triangle.
 6. Put them into boiling water; boil for 10 minutes.
 7. Drain and serve.
