The cold brisk wind whips through the streets on an early spring evening in Prague. As temperatures hover around freezing, only one dish warms the soul this evening. After forty years of communist control, Prague obtained its freedom in 1989. Although the City of a Hundred Spires remained in tack during the occupation, communism took a toll on Prague's cuisine. However, focused efforts over the past few decades is finally paying off-Prague is now one of the hottest foodie cities in Europe.
